Peanut Butter Pie

Last weekend, I decided I wanted to make a pie.  My brother in law was in town from L.A. and was going to stay with us Saturday night.  I wasn't feeling extremely ambitious, we took him out for dinner at our favorite Mexican restauarant, La Mesa, and then had dessert at home.  Peanut Butter Pie is the perfect dessert for guys.  Why it is that guys love peanut butter SO much, I think I'll never really know, but I find it to be true.  The great thing about this dish is girls will love it too! 

Peanut Butter Pie - recipe from The Sister's Cafe

Ingredients:
1  pre-made graham cracker crust
1 cup smooth peanut butter
8oz softened cream cheese
1 cup sugar
1 cup heavy cream
1 tsp pure vanilla extract
2 tbsp butter, melted
 Fudge Sauce:
14oz can sweetened condensed milk
2 oz semi-sweet chocolate chips
1 tsp pure vanilla extract
2 tbps butter

Directions:
1.  Mix (medium speed) peanut butter, sugar, cream cheese and melted butter together in a large bowl until creamy. 
2.  Whip heavy cream in a medium bowl until stiff peaks form,  Mix in vanilla.
3.  Fold whipped cream into the peanut butter mixture until well blended.
4.  Pour mixture into the pie crust and refrigerate for at least 2 hours.  Carefully spread cooled hot fudge to the top of the pie mixture.  Refrigerate for an additional 6 hours and serve.
5.  For Fudge Sauce:  Mix chocolate and sweetened condensed milk on low heat in a small saucepot until melted.  Add butter and vanilla.  Store in a sealed container in refrigerator, re-heat when needed.
