Red, White and Blue Fruit Tartlett

I have a Fourth of July BBQ to attend tonight and was having a hard time thinking of just what kind of dish I wanted to bring with me.  Should I take a veggie dish, should I take a pasta salad, should I take some kind of dip or some sort of dessert?   Frankly, I was thinking a tad bit too hard about it that it made my head hurt.  Then I recieved a Tweet from the Food Network and I found the cutest, most perfect and festive dish to ring in the Fourth of July. I can only hope that this party will still go on because we have rain scheduled thoroughout the day in our forecast and as much as I really, really enjoyed sampling this dish, I don't want to munch on all 40 pieces myself like my very own episode of (Wo) Man vs Food. I don't want to attempt it because I probably could very well do it but I am sure my jeans would not Thank Me afterwards.

You really should make this for your next party.  It doesn't even have to be on the Fourth.  It is a great finger food dessert that everyone will ohh and ahh over because it is just so pretty and will go back for seconds for because it is yummy too!

Red, White and Blue Fruit Tartlett - adapted from Fruit Tart Flag recipe on FoodNetwork.com 

Ingredients:
8 oz Marscapone Cheese
3 Tbsp Powdered Sugar
1/2 cup whipped cream (go ahead and make your own, you'll thank yourself later)
Blueberries
Strawberrys (sliced into quarters)
45 Phyllo Tart cups (found in the freezer aisle at grocery store)

Directions:
1.  Mix marscapone cheese with powdered sugar until well blended.  Fold in whipped cream. 
2.  In a zip lock baggie add the cheese mixture and cut a small hole at one end of the bag to squeeze a dollop into your tartlets.  This is nice so you don't make a big mess everywhere. 
3.  Add one blueberry and one strawberry to each tartlett.  Keep refrigerated until ready to serve. 

The other thing that has kept me busy this weekend is a little baby fledgling robin.  Remember the picture of the Momma Robin sitting in her nest I had posted a few weeks ago?  Well, yesterday when I was out in the yard the baby fell out of the nest right in front of me.

The Momma and Daddy have still been taking care of it.  They feed it and hover around the yard but I have been very concerned about it's survival.  Especially since it would run to me everytime I went out into the yard.  I even made a fool of myself as I ran backward from it flapping my wings and trying to show it how to fly.  It is true.  My husband got it all on video which I won't be posting at all.  My biggest worry has been nighttime.  We have cats that roam the night in our neighborhood and I had a hard time sleeping last night for fear that I would find a dead little fledgeling when I woke up this morning.  When I woke up he was still alive.  It poured rain all night and the poor little guy was soaked through smack dap in the middle of our yard, shivering and couldn't hop at all anymore.  My husband, got out some gloves, threw some mulch in the shallow lid of a box, put the fledgeling on the mulch and set it under a tree in our yard to get it out of the rain and make it as comfortable as possible.  Momma and Daddy are still hovering around it but this rain is both a blessing and a curse.  The blessing was that I don't think the cats were out last night due to it and the curse is I don't think it is going to be able to fly at all with soggy wings.  I love my new little friend, but it doesn't look at all hopeful for him.  He is completely out of energy.   I really don't think he is going to survive the rest of the day.  That is what I get for getting attached to a wild birdie, an oh so sad ending.  Nature sucks sometimes doesn't it?   :^(
