Recipe Hunting 101 - Snicker Bar Cake

A co-worker of mine had a birthday this week.  We decided to have a chili dog feast over the lunch hour to celebrate.  I was in charge of bringing hot dog buns and cheese but at the last minute I decided to make a cake that I saw on Mels Kitchen Cafe.  My co-worker loves Snicker Bars, so when I found a cake that I could put chopped up snicker bars all over the top I knew I had to make it. 

Let me just tell you, this cake was the bomb.  It is moist, crumbly and just divine.  I had loads of nice compliments along with requests for second helpings!  The nice thing about this cake is you change it up to whatever your favorite candy bar is.  The original cake used Heath Bars as a topping.  I really liked the Snickers but I think the next time I make this cake I am going to try using Rolo's.  I think all that melted chocolate and caramel will really send this over the top!

Snicker Bar Cake - recipe adapted from Mel's Kitchen Cafe

Ingredients:
1 cup brown sugar, packed
1/2 cup sugar
2 cups flour
8 tbsp butter (one stick), softened
1 cup buttermilk
1 egg
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
5-6 Snicker Bars, chopped

Directions:
1.  In a large bowl, add brown sugar, sugar, flour and butter. Use a pastry mixer to mix everything together until it's nice and crumbly.  Remove 1/2 cup of this mixture and set aside.
2.  Add buttermilk, egg, vanilla, baking soda, and salt to your mixture.  Stir until mixed well.
3.  Pour mixture into a greased 9x13 rectangular baking pan.  Add snickers and reserved crumbles to the top. 
4.  Bake at 350F for 25-30 minutes or until a toothpick comes out clean.
5.  Store at room temperature, in an airtight container.
