Let's get dipping! Brie with Apricot Topping

On Saturday, my husband and I went down to Lincoln to watch the first game of the season for the Nebraska Cornhuskers.  We won, btw, 49-10!  GO BIG RED!!!  Sorry, I had to get that out of my system.  If we Husker fans don't shout that at least 10 times a day during Husker season, we are not true fans, lol.

We went over to Andy's parents house for game night.  I wanted to take something simple and some kind of dip always works well for grazing during football games.  About a year ago, I found a really cool blog via a post on Facebook by a good friend of mine.  The blog is called "A Year of Slow Cooking".  The author of the blog took on a challenge to use her slow cooker everyday for a year...and I thought finding one new recipe a week was a challenge! :^)  One of the recipes for a dip really stood out to me because it was a bit different then the normal dips you would find at a tailgate party.  I tracked it down on her site and voila, a star was born...then eaten. 

Brie with Apricot Topping - recipe adapted from A Year of Slow Cooking on blogspot

Ingredients:
 1-  13.2 oz round of Brie 
1/2 cup dried apricots, chopped up

2 Tbsp brown sugar
2 Tbsp water
1 Tsp balsamic vinegar
1/4 Tsp dried rosemary, chopped
1/2 cup walnuts, chopped

Directions: 
1.  Place Brie in a 1.5 quart slow cooker.  If you don't care for the rind, cut it off.  I will do this the next time because the rind just doesn't look very pretty when you start dipping into it. 
2.  Mix all other ingredients in a small bowl and dump on top of the Brie.
3.  Turn the slow cooker on low for 3 hours, or high for 1-2.  Check on it regularly but there is no need to stir. 
4.  Serve with apples slices or crackers.
